MEEt Our Chef
From the bustling streets of Tokyo, Tomotsugu Kubo (or “Tomo” as he likes to be called) began his culinary career. From an early age, Chef Tomo found success as a result of his consistent pursuit for perfection. After graduating at the top of his university class, Chef Tomo has spent over a decade becoming the master of his craft. He rose in the ranks of his kitchen and quickly became the head chef and manager in the restaurants he worked in. He has trained under the famous Japanese brands like Tsujita. EN Brasserie (in Tokyo) and Daisyo.
In 2018, after three years of leading Tsujita’s expansion in the North America, Chef Tomo decided to pursue his own ambitions by founding TabeTomo—New York’s premiere tsukemen-specialty restaurant—where he personally serves his signature 60-hour pork broth to his loyal customers that he has developed over a decades time.
